1 pound bacon, cut into 1 inch cubes
1 onion, chopped
1 medium green bell pepper, chopped
3 cloves garlic, minced
1/2 teaspoon salt
2 tablespoons ground black pepper
1 teaspoon dried thyme
4 tablespoons allspice berries
4 fresh sausage links
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. In a large bowl, prepare a heavy layer of aluminum foil that is at least 12 inches in diameter. Spread bacon grease over foil, and place sausage in foil top and bottom.
The bacon grease should be greased and thick. Fry sausage in a large skillet over medium heat until evenly brown. Drain grease, and place on a large serving platter. Add seasonings such as thyme and saute until tender.
Bake 8 slices bread pans in preheated oven for a few minutes or until lightly browned. Spread sausage and bacon grease evenly over bread pans. Top with strips of cheese.
Remove bacon grease from pan and spread evenly over sausage. Garnish with bacon bits as desired.
