Mommy, Sweet Potato Pie Recipe

Ingredients

1 (8 ounce) package Mommy's Comfort Food Mix

1 (4 ounce) can sweet potato, drained

1 tablespoon margarine

1/4 teaspoon salt

1 teaspoon cornstarch

2 tablespoons white sugar

1 (3 ounce) package instant lemon pudding mix

1 cup white sugar

2 eggs

1 teaspoon vegetable oil

3 cups milk

1 tablespoon olive oil

2 tablespoons butter

2 tablespoons all-purpose flour

1 teaspoon ground nutmeg

1 teaspoon baking soda

1 teaspoon vanilla extract

1/2 teaspoon orange juice

1/4 teaspoon lemon zest

2 (2 ounce) packages lemon juice yogurt mix

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, mix Comfort Food Mix, sweet potato, margarine, salt, cornstarch, sugar, pudding mix, lemon pudding, sugar, eggs, oil, milk, olive oil and butter. Mix well. Stir all ingredients into pie crust. Place lemon juice in a separate container and pour lemon zest over pie.

Bake pie in preheated oven for 45 minutes, or until toothpick inserted in center comes out clean.

Carefully remove pie from oven and sprinkle lemon slices on top. Allow to cool completely before filling. Chill remaining lemon juice in refrigerator.

To make lemon lemon filling: In a medium saucepan, combine lemon juice, lemon zest, lemon juice yogurt mix, lemon juice yogurt mix, lemon zest and lemon juice yogurt mix. Stir thoroughly, then pour over pie. Chill until serving time.

This is good for most sandwiches. I folded in the bacon before cutting and used the garlic salt after heating it in the oven. I smeared this over the steak and I also drizzled my cheese dressing on the inside of the bread. I added poppy seeds as well as cream cheese. I would recommend this recipe to anyone.
