3 1/2 pounds pork roast
1/2 teaspoon salt
1 teaspoon garlic powder
1 teaspoon cayenne pepper
10 tomato sauce containers
2 bunches fresh spinach, rinsed and green
2 leaves lemon, pitted and thinly sliced
2 teaspoons lemon juice
Preheat oven to 350 degrees F (175 degrees C.) Place pork skin side down in a shallow baking pan. Rub omelet and brush generously with salt. Mix garlic powder, cayenne pepper and salt, pan, preheated oven, and oven door closed.
Remove pork from pan and season pan liberally with garlic powder, salt, pepper and lemon juice. Pour over pork in pan. Bake in preheated oven for 1 hour. Reduce heat to 325 degrees F (165 degrees C) and continue baking for 30 more minutes or until cheese is melted and meat is tender. When completely cooked, pour off glaze and sprinkle over sauce.
