Baked Chicken Fajitas (Fajitas de Bananas) Recipe

Ingredients

1 (4 pound) whole chicken

1 cup canned tomato sauce

1 (16 ounce) can tomato juice

1 (16 ounce) can can barbeque beans

4 cups yellow cornmeal

1 cup white sugar

2 tablespoons salt

1 cup canned tomato sauce

1 (4.5 ounce) can tomato juice

2 cups bacon, chopped

Directions

Preheat oven to 350 degrees F (175 degrees C). Heat the skin and oil in a skillet over medium heat. Add the skinless, boneless chicken breast and heat until lightly browned. Remove and set aside.

In a large mixing bowl, combine the tomato sauce, tomato juice and barbeque beans with the chicken. Transfer chicken to a 9x13 inch baking dish. Pour the tomato sauce mixture over the chicken and cover with bacon.

Bake in the preheated oven for 45 minutes, or until the meat is no longer pink and the beans are cooked. Serve with the tortilla chips for better roasted texture.

These were great. But watch out for the garlic. Too much can be a bad thing.
