2 eggs
1 teaspoon vanilla extract
1 cup brown sugar
1/2 cup lemon juice
1 cup whipping cream
1 cup butter, softened
2 teaspoons Irish cream liqueur
1 tablespoon rum
1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C).
Beat eggs, 1 teaspoon vanilla and brown sugar in small bowl. Stir together lemon juice, 1 cup cream and butter in small bowl, blending until very well blended. Gradually mix lemon and cream mixture to make a spreadable consistency. Spread mixture into a cake-like shape.
Bake in preheated oven until lightly browned, about 35 minutes. Cool completely, remove from pan.
Place cream in a small saucepan and boil over medium heat. Remove from heat and stir in eggs and lemon juice. Mix in whipping cream, rum and vanilla. Drizzle over cake.
