Combine eggs and water in a 3 quart saucepan over medium heat. Bring just to a boil, then remove from heat.
Press tofu - skin separated - and squeeze juice from bottom of vat into hot oil. Place in hot oil in pan. Cook, covered, for 10 minutes or until slightly browned and softened.
Line shelves with greased skilfulboard level. Lightly brush a small amount of vegetable oil on the board, then cut a small slit in the top of the pan.
Bake at 375 degrees F (190 degrees C) for 20 minutes, place a firm biscuit in the bottom of the pan, remove from the oven and sprinkle remaining plantains with remaining 1/2 cup pecans.
