4 (9 inch) pie shells
3/4 cup butter, melted
1 cup packed light brown sugar
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon vanilla extract
1 egg white
2 tablespoons hot water
1/2 teaspoon lemon juice
1 tablespoon lemon zest
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8x8 inch pie pans.
In a large bowl, cream together butter and brown sugar. Stir in flour, baking soda, salt, vanilla and egg white. Stir in hot water and lemon juice. Mix in lemon zest and lemon zest. Drop by rounded spoonfuls into pie shells. Place one slice of pie shell onto each pie shell.
Bake in preheated oven for 50 minutes, or until just crusts begin to brown. Cool in pan on wire rack for 10 minutes, then remove from pan. Cool completely. Garnish with lemon slice.
