1 cup buttermilk baking mix
1 tablespoon buttermilk
1 cup buttermilk
1 tablespoon butter
Preheat oven to 375 F (190 C). Grease a 15x17 inch baking pan. Line baking sheets with foil.
In a large bowl, stir together the baking mix and buttermilk. Next, stir in butter only until all the butter is incorporated. Stir in flour, 1/4 cup at a time, until well blended. Scrape bowl, and beat until just tender peaks. Fold in the buttermilk/buttermilk mixture alternately with the butter, mixing just until incorporated.
Pour into prepared pan.
Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted into the middle comes out clean. Cool completely in pan immediately after removing from pan. If necessary, add the remaining 1 cup butter to just about melt the buns. Top with par-fried carrots, and serve hot.
