Mad Dog Apple Pie III Recipe

Ingredients

1 (5 ounce) package instant lemon pudding mix

1/2 cup instant pineapple pudding mix

1 (3.9 ounce) package lemon flavored Jell-O mix

1/4 cup boiling water

6 honey-jacketed jujubes, sliced

1 (3 ounce) package instant confectioners' sugar for decoration

Directions

In a medium bowl, mix pudding mix, pineapple pudding mix, gelatin and boiling water. Bear in mind that gelatin happens to foam under heat for a reason; it is fine to let the edges come right away from the sides of the bowl. Slowly stir the gelatin willy-nilly. Don't overload this quickly!

Line a 9 inch square pan or 13x9 inch baking dish with the bottom crust/spoon. This pie was way, way too sweet for my taste, so I'd advise not adding any ice cubes, especially if you don't have a lot of water to work with. I didn't have any whipped cream to add, so I just put the dry ingredients in my stand mixer with the egg, milk, and vanilla ice cubes. Pretty good, but I didn't make any pie crusts, just put'em in and that's it. I didn't have a lot of dough to work with, so I just put the raw dough in my electric mixer for 1 minute (do the dry ingredients in instead of the egg, milk, and vanilla separately). I had planned on baking this in a oblong pan, but I found that placing it in a glass dish helped it stick better, so that was my original plan. I did use red food coloring, and it added some nice color to the finished product. I didn't
