Pumpkin Pancakes Recipe

Ingredients

1 cup butter, softened

1/4 cup vegetable oil

1 cup packed brown sugar

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1 teaspoon vanilla extract

1 egg

1 cup pumpkin puree

2 tablespoons vegetable oil

1 cup all-purpose flour

3 teaspoons baking powder

1/2 teaspoon baking soda

1 cup brown sugar

1/4 teaspoon salt

1/4 teaspoon ground cinnamon

Directions

Preheat oven broiler.

In a large bowl, cream together the butter and oil until smooth. Beat in the brown sugar, salt, and cinnamon. Mix in egg until blended. Stir in the pumpkin puree and vegetable oil. Gradually mix in brown sugar, salt, and cinnamon.

Cover dough and refrigerate overnight.

Bake in preheated oven for 60 minutes, until golden brown. Serve warm or at room temperature.

Whole family really liked this. I used Lyza dagger's spice mix (additionally would have added garlic) but thse drinks call for McDougald's Original recipe Girl Scout Cookies. It is the same recipe that came in my father's recipe deck when I learned to read. Great job!
