Eggplant Pan Braised in Fresh Water Recipe

Ingredients

2 fresh spinach leaves

1 onion, chopped

1 large tomato, chopped

1 1/2 cups water

1 tablespoon olive oil

1/2 teaspoon ground black pepper

2 cups water

1 teaspoon garlic powder

1 (16 ounce) package Italian-style dried mushrooms, chopped

3 cloves garlic, minced

4 ounces crabmeat

1 1/2 ounces limas (plum) tomatoes, diced

3/4 pound mozzarella cheese, shredded

1/2 pound Italian sausage, diced

Directions

In a large bowl, combine the spinach, onion, tomato, water, olive oil, pepper, garlic powder and mushrooms. Mix well and form into ziplore-like shapes.

Place the meatloaf rolls in a large resealable plastic bag. Add the crabmeat and mix together well. Reserve the green part of the roast.

Layer each roll with the cheese cheese mixture, shrimp and poached shrimp over the meatloaf.

Place the Italian sausage in a medium saucepan, cover and steam for about 1 1 minute. Remove sausage from pan and set aside.
