1/3 cup plain nonfat yogurt
1 large orange, juiced
1 carrot, diced
1/2 carrot, diced
1/2 green bell pepper, diced
1 cup sliced fresh mushrooms
3 apples, peeled and sliced
Melt yogurt in medium saucepan over low heat. Stir in orange juice, carrot, green bell pepper and tomatoes. Bring to a boil, reduce heat to medium low and simmer 30 minutes or until vegetables are tender.
In large bowl, stir together pineapple, strawberries, apples and onions.
