1/2 cup butter or margarine
1 teaspoon vanilla extract
3/4 cup packed light brown sugar
1/4 cup raisins
3/4 cup coarsely chopped almonds
1 (10 ounce) package frozen chopped spinach, thawed
1 tablespoon olive oil
1 (8 ounce) package cream cheese
Preheat oven to 375 degrees F (190 degrees C).
Fold butter cream cheese and vanilla into a small bowl, stir. Scoop a large portion of custard onto each muffin.
Bake in preheated oven for 15 minutes, or until a toothpick inserted into center of muffin comes out clean. Serve warm.
