Cocoa-Banana Cake: (3.5 ounce) package instant vanilla pudding mix

Ingredients

1 (18.5 ounce) can crushed pineapple juice concentrate

1 tablespoon confectioners' sugar

1 1/2 cups all-purpose flour

1/2 cup granulated sugar for decoration

Directions

Preheat oven to 350 degrees F (175 degrees C). Brush top and bottom of 9 inch springform pan with water.

In a small bowl, mix together pudding mix, pineapple juice concentrate, and confectioners' sugar. Pour into prepared pan.

Bake in preheated oven for 1 hour, or until a toothpick inserted into center of the cake comes out clean. Let cool in pan for 5 minutes. Spread frosting over cake while still warm.

In a medium bowl, combine the bananas, pineapple juice concentrate, and granulated sugar. Mix until smooth. Pour over cooled cake. Chill in refrigerator.
