1 3/4 cups boiling water
3 tablespoons margarine
1 tablespoon white sugar
3 eggs, beaten
1 cup apple cider
1 1/2 teaspoons vanilla extract
1 cup butter
2 1/2 teaspoons lemon juice
1 cup sliced almonds
1 cup white sugar
1 teaspoon vanilla extract
1 cup can evaporated milk
1 teaspoon lemon zest
4 apple slices, peeled and sliced
Preheat oven to 400 degrees F (200 degrees C).
Meanwhile, Heat the water in a saucepan to just cover. Bring mixture to a boil. Boil, stirring often, for 4 minutes; remove from heat. Mix margarine with sugar; beat with electric mixer, scraping bowl occasionally, until thoroughly combined. Beat in eggs, one at a time, stirring just until incorporated.
Combine cider, lemon juice and almonds in small bowl; mix into boiling mixture. Reduce heat to medium-low and simmer for 1 minute. Pour mixture into pie crust.
Bake in preheated oven for 35 minutes, or until golden brown. Cool before serving. Store in refrigerator.
