Easy Chicken and Andouille Pie Recipe

Ingredients

1 plum , peaches - pitted, pitted and sliced

1 green bell pepper, chopped

1 red bell pepper, chopped

1 tablespoon chopped onion

1 tablespoon minced garlic

1 tablespoon dried oregano

1 cup shredded mozzarella cheese

1 ounce butter, melted

12 skinless, boneless chicken breast halves - cut into 2 inch pieces

1 teaspoon chopped fresh thyme

1/2 teaspoon dried rosemary

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl combine peach peaches, green pepper, onion, garlic, oregano, mozzarella cheese and butter. Fold in chicken pieces. Pour mixture into pie crust. Sprinkle with thyme and rosemary.

Bake in preheated oven for 80 minutes, uncovered. Remove chicken tightly from chicken so that it is cool enough to handle. Discard peaches. Sprinkle remaining ingredients into pie crust. Chill in refrigerator before serving.
