1 cup butter, melted
1/2 cup white sugar
1 teaspoon salt
1 egg, lightly beaten
1 teaspoon vanilla extract
1 (12 ounce) package firm tofu, cubed
1 bunch parsley, chopped
1 bunch green onions, chopped
Spread a small amount of the melted butter in the bottom of a 9 inch square pan. Drizzle with sugar and salt. Spread remaining mixture on top and pour in egg, vanilla and shredded coconut.
Bake in preheated oven for 25-30 minutes, or until brown and firm. Cool completely before cutting into squares. Slice into chunks and serve with parsley, green onions and coconut.
