6 ripe tomatoes, diced
5 large onions, diced
2 medium heads garlic
2 teaspoons Italian seasoning seasoning
2 teaspoons dried sage
2 teaspoons dried rosemary
1 teaspoon dried thyme
1/4 teaspoon ground black pepper
1 cup milk
1/2 teaspoon garlic powder
1/4 teaspoon paprika (optional)
In a large bowl, mash tomatoes and onions. Stir in garlic, Italian seasoning, sage, rosemary, thyme, black pepper, milk, garlic powder, and paprika. Transfer mixture to the bottom of a jar. Cover with a towel to keep it from drying out.
Store the jar in the refrigerator for a week or more (depending on how valuable the tomatoes and onions remain) or store for 4 hours to overnight.
