1/2 cup butter, softened
1/2 cup brown sugar
1/2 cup diced onion
2 eggs
1/3 cup white sugar
1 teaspoon vanilla extract
1 (15 ounce) can whole cranberry juice concentrate
1 (14 ounce) can whole blackberry juice concentrate
1 (8 ounce) can chopped cranberry juice concentrate
1 cup pecans
Stir butter, brown sugar and onion into butter mixture. Mix well. Stir eggs and 1/3 cup white sugar into brown sugar mixture. Mix well.
Stir vanilla into cranberry mixture. Mix well. Spread mixture evenly over butter mixture.
Roast in preheated oven for 1 hour, stirring occasionally, until meat is tender.
