1 (6 ounce) can evaporated milk
4 eggs
3 teaspoons baking soda
1 1/2 cups white sugar
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons vanilla extract
1/4 teaspoon salt
Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with paper muffin liners.
In a large bowl, cream together the evaporated milk, eggs, baking soda, sugar, flour, baking powder and baking soda. Beat in the heavy cream and the eggs. Beat in the dry ingredients. Fold in the flour mixture. Spoon batter into prepared muffin liners.
Bake in preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the muffin comes out clean.
