3 eggs
1 cup white sugar
1/4 cup cocoa extract
2 tablespoons vanilla extract
1 teaspoon lemon zest
1/2 teaspoon lemon juice
1 (8 ounce) package instant vanilla pudding mix
Preheat oven to 325 degrees F (165 degrees C). Grease and flour cookie sheets.
In a large bowl, beat together eggs, 1 cup sugar, cocoa powder, lemon extract and lemon zest. Stir in the lemon juice and lemon juice. Drop by rounded spoonfuls onto the cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, or until a wooden toothpick inserted into the center comes out clean. Cool on a wire rack.
Frost with whipped cream and lemon frosting.
