1 (9 inch) graham cracker crust
3/4 cup butter, softened
1 1/2 cups white sugar
3 eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon salt
3/4 cup chopped dried mixed fruit
1 tablespoon butter
2 teaspoons vanilla extract
Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.
Melt 1 cup butter or margarine and sugar in a medium bowl. Beat eggs and vanilla in a large bowl until smooth. Stir in flour, salt, and 3/4 cup dried fruit in a separate bowl.
Divide dough in half, and form into ball. Roll ball into 1 inch balls and place on prepared baking sheet.
In a medium mixer bowl, beat eggs, 1 teaspoon vanilla, and 2 1/2 cups flour on medium speed until smooth. Beat in milk, 1/2 cup at a time, until smooth. Pour batter onto prepared baking sheet.
Bake in preheated oven for 30 minutes, until a toothpick inserted comes out clean.
