Honey-Ginger Cake Recipe

Ingredients

2 1/4 cups all-purpose flour

2 teaspoons baking powder

2 teaspoons baking soda

3 teaspoons white sugar

3 eggs

2 cups butter

3 tablespoons honey

4 cups confectioners' sugar for dusting

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.

Sift together the flour, baking powder, baking soda and white sugar. Set aside.

In a large bowl, cream together the sugar, butter and honey until light and fluffy. Beat in the eggs one at a time, then stir into the creamed mixture. Beat in the flour mixture alternately with the white sugar, mixing just until incorporated. Fold in the honey and confectioners' sugar until just blended. Scoop the batter into prepared pan. Fill halfway with batter.

Bake in the preheated oven for 35 minutes, or until a toothpick inserted in the center of the cake comes out clean. Cool cake completely. Dust with crumbled ice cream.
