1/2 cup warm water (110 degrees F/45 degrees C)
1/2 cup shortening
1/2 cup white sugar
1 cup dry bread flour
1/2 cup dry yeast
1 egg
1 teaspoon salt
1/2 cup butter, melted
1/2 cup shredded Cheddar cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
In a large bowl, combine warm water, shortening, sugar, and 1/2 cup of bread flour. Stir until all ingredients are thoroughly combined. Cover, and let stand until mixture is about 2 hours.
In a small bowl, dissolve yeast in warm water. Stir in 1 egg, 1 teaspoon salt, 1/2 cup butter, Cheddar cheese, and 1/2 cup Cheddar cheese. Add 1/2 cup Cheddar cheese, and stir until cheese is melted. Let stand at room temperature for 30 minutes.
Meanwhile, preheat oven to 350 degrees F (175 degrees C).
In a large bowl, stir together 1/2 cup of bread flour, 1/2 cup of white sugar, and 1/2 cup dry bread flour. Stir in 1/2 cup of the milk, 1/3 cup of sugar, 1/2 teaspoon of the salt, and 1/2 cup of the melted butter. Add 1/2 cup Cheddar cheese, and stir until cheese is melted.
Sift together the milk and 1/3 cup of sugar; gradually stir into the flour mixture. Stir in the remaining 3 cups of bread flour, 1/2 cup at a time, until the dough comes together. On a lightly floured surface, roll the dough out to 1/4 inch thick. Cut into 1/2 inch slices.
Pinch off a piece of dough, and cut into 1/2 inch slices. Place slices 1 inch apart onto ungreased cookie sheets.
Bake for 12 to 15 minutes in the preheated oven. Remove from cookie sheets to cool on wire racks.
I have made this twice now and both times it tastes wonderful! Just tried it tonight. Called it Iraqi Bowl Semenner -- It was very good but would use some more raisins in.
