4 eggs, beaten
1 (16 ounce) can pungent wild mushrooms, drained
1 1/2 ounces fresh mushrooms, sliced
salt to taste
ground black pepper to taste
1 tablespoon vegetable oil
1 1/4 teaspoons garlic powder
1/2 teaspoon cold lemon juice
1 dash Vodka
1 tablespoon mixed maraschino cherries
1 cup shredded Cheddar cheese
vegetable oil for frying
Preheat oven to 375 degrees F (190 degrees C).
Beat together eggs, mushrooms, mushrooms, salt, pepper and oil. Combine in a shallow dish or bowl. Mix egg mixture, mushrooms, salt, pepper, oil and garlic powder. Mix well. Place mixture in a shallow dish or bowl. Mix together lemon juice and champagne over cheese mixture, mixing well.
Tightly seal a 9 inch round pan. Place cheese mixture in pan. Cover and rock roll cheese until cheese is completely smooth. Transfer to prepared pan. Dust top with Vodka and maraschino cherries.
Heat oil in a large, heavy skillet over high heat. Unroll cheese mixture and place in prepared pan. Fry in oven preheated oil until golden brown, flipping once with pan. Fry on four sides. Drain on paper towels. Drain on paper towels. Serve immediately.
