1/4 cup butter, softened
1 cup all-purpose flour
1/4 teaspoon salt
1/2 cup packed brown sugar
2 egg whites
1/2 cup buttermilk
1 cup buttermilk
1 teaspoon vanilla extract
1 1/2 teaspoons unsweetened cocoa powder
1 1/2 cups rolled oats
1 1/3 cups semisweet chocolate chips
Preheat the oven to 350 degrees F (175 degrees C).
In a large bowl, cream together 1/4 cup butter and 1 cup flour. Stir in brown sugar, 2 egg whites and buttermilk.
In a large bowl, beat together white sugar, buttermilk and vanilla. In a small bowl, combine oats and cocoa. Stir together until well blended. Fold in the chopped cookies. Drop dough by heaping spoonfuls onto ungreased baking sheets.
Bake for 12 to 15 minutes in the preheated oven, until lightly browned. Let cool on baking sheets for 2 minutes before removing to wire racks to cool completely.
