2 (18 ounce) can diced green onions
1/2 cup carrot juice
2 large carrots, shredded
2 large carrots, finely diced
2 bananas, chopped
1 cup white sugar
3 eggs
1 teaspoon vanilla extract
1 cup milk, room temperature
1 cup vegetable oil
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-in. x 5-in. x 1-1-inch baking pans.
To Make Crust: In a small saucepan, combine green onions, carrots, carrot juice, chopped carrots, sliced bananas, sugar, eggs, vanilla and milk. Mix thoroughly, stirring constantly.
To Make Insulation: In a small saucepan, mix together vegetable oil and milk. Stir into yellow cake mix. Sprinkle over top and sides of prepared pans.
Bake in preheated oven for 60 minutes, or until an inserted toothpick inserted into the cake comes out clean. Cool entirely before removing from pan.
