Cappuccino Cake Recipe

Ingredients

1/2 cup butter

2 eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon salt

1 cup milk

1 (18.25 ounce) can sliced dried apricots

3 cups confectioners' sugar for dusting

Directions

Preheat the oven to 375 degrees F (190 degrees C). Grease and flour two 9 inch round baking pans.

In a large bowl, cream together the butter, eggs, vanilla extract, flour, baking powder, baking soda, cinnamon, salt and milk. Beat in the apricots. Stir in the sugar until just blended. Pour batter into prepared pans.

Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool. Dust with confectioners' sugar before removing from pan.
