2 cups potatoes, peeled and cubed
1/2 cup butter
1/2 cup dry bread crumbs
1/2 cup white sugar
1 tablespoon salt
1/2 teaspoon ground black pepper
3/4 cup packed brown sugar
1/2 cup water
1/2 cup milk
1/4 cup butter
1/4 cup milk
1/2 teaspoon vanilla extract
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl, combine potatoes, butter, bread crumbs, sugar, salt and pepper. Stir well. In a small bowl, combine brown sugar, water and milk. Stir well. Pour into a 9x13 inch baking dish.
Bake in preheated oven for 30 minutes.
To the potatoes, add the butter, brown sugar, and milk. Stir well. Pour into baking dish. Bake for an additional 30 minutes.
To make the frosting: In a medium saucepan, combine the butter, brown sugar, and milk. Bring to a boil, then reduce heat to medium-low. Stir in vanilla extract and milk mixture. Bring to a boil, then reduce heat to low and simmer. Stir in potatoes, and let cook 5 minutes. Stir in the chocolate chips and chocolate mixture. Remove from heat and stir in the potatoes. Place on a platter, and let cool 10 minutes before cutting into squares.
