2 cups strawberry jam
1 cup milk
1/2 teaspoon vanilla extract
1/4 teaspoon lemon zest
1 cup packed light brown sugar
1 teaspoon salt
2 tablespoons butter, melted
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round pans.
In a medium bowl, mix strawberry jam, milk, vanilla extract, lemon zest and brown sugar. Stir into remaining ingredients. Pour into prepared pans.
Bake in preheated oven for 60 minutes. Remove from oven; continue baking 5 minutes per side, until a toothpick inserted in center of the cake comes out clean. Cool completely. Sprinkle tops generously with melted butter. Remove from pans and pipe in sides of two separate serving bowls. Divide the cream pie among two large serving bowls. Pipe meringue onto chilled cake in smaller spoonfuls.
