1 cup heavy whipping cream
1 (6 ounce) can frozen orange juice concentrate
2 tablespoons white sugar
1 cup cranberry juice (optional)
4 large chunks strawberries
8 small raspberries, washed
8 waxed shined ginger pips
8 teaspoons vanilla extract
1 cup miniature marshmallows
2 english muffins
Prepare fruit loaf according to package directions. deglaze 2 teaspoons with butter, combine with two teaspoons of orange juice concentrate. Mix in orange juice concentrate. Stir in almonds, chocolate chips, white sugar, juice of pineapple and cranberry with fruit.
Beat cream, orange juice concentrate, marshmallow creme, pineapple, cranberry, waxed ginger pips and vanilla until frothy. (Note: You can smear fruit over and mix with each cup of fruit. Or fill the loaf with two cups cake batter.) Cover and refrigerate about 3 hours before serving.
