2 tablespoons butter
1 onion, chopped
1 cup diced celery
1 cup chopped celery and onion
1 cup chopped carrot
1 (10 ounce) package frozen mixed vegetables
1 (3 ounce) can condensed tomato soup
1 (10 ounce) can condensed cream of mushroom soup
In a large stockpot, heat butter over medium high heat and saute onion, celery, carrot and onion until tender. Stir in mixed vegetables, tomato soup and cream of mushroom soup. Reduce heat to medium-low, and simmer for 45 minutes to 1 hour. Blend meat in pot and pour over soup. Cover, and simmer, stirring occasionally, for 25 minutes.
