Pineapple Walnut Spread Recipe

Ingredients

1 cup white sugar

1 egg

1 cup corn syrup

2 cups all-purpose flour

3 teaspoons baking powder

2 teaspoons salt

1/2 cup brown sugar

1 cup margarine, softened

2 tablespoons butter, softened

1 cup shredded Cheddar cheese

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.

To Make Cornbread: In a medium bowl, stir together sugar, egg, corn syrup, and 3 cups flour. Cut in margarine until mixture resembles cornmeal. Stir in baking powder, salt, and brown sugar until mixture is smooth. Stir in butter or margarine. Bake in a preheated oven at 350 degrees F (175 degrees C) for 30 minutes, stirring occasionally.

To Make Waffles: In a small saucepan over medium/low heat, melt 2 tablespoons margarine or butter and stir in white sugar, then quickly stir in flour. Whisk until smooth. Stir in baking powder, salt, and white sugar; puree will be 1/2 cup. Dissolve 1/2 cup butter or margarine in flour. Stir in Cheddar cheese.

Divide batter evenly among prepared pan or baking sheet. Bake in preheated oven for 40 to 50 minutes, or until center is firm and golden brown. Cool before serving.
