1/3 cup basil, chopped
1/3 cup uncooked white rice
salt to taste
1 teaspoon ground black pepper
water to cover
Place basil and rice in large bowl. Add salt and 1/2 cup oil. Heat through, then reduce heat to low and simmer for 15 minutes, stirring occasionally. Stir in 1 teaspoon pepper, water and seasoning mixture. Simmer 3 to 5 minutes, stirring frequently. Stir in chicken broth and simmer, covered, until all liquid is absorbed and flavor is well blended with broth, about 2 to 5 minutes. (Note: The broth may thicken while cooking.)

I made it but the directions told me to blend the eggs before adding the spinach and crumbled bacon. I skipped that and added the eggs mixed in my oil. Yummy! A nice healthy appetizer.
