2 1/2 cups all-purpose flour
1 1/2 teaspoons Baking Powder
1 teaspoon ground ginger
2 cups butter or margarine, softened
1 (18.25 ounce) package cake mix
2/3 cup cooked corn
2 eggs
1/4 cup granulated sugar or to taste
3 1/2 teaspoons vanilla extract
2 tablespoons all-purpose flour
1 tablespoon lemon juice
1 (~14 ounce) can fruit cocktail with syrup (optional)
1/2 cup shredded reduced-fat Swiss cheese
Preheat oven to 400 degrees F (200 degrees C). Roll out dough. Cut out and cut a circle in each cookie. Place cookies 1 inch apart onto ungreased cookie sheets.
Bake 8 to 10 minutes in the preheated oven. Remove from cookie sheets to cool completely, but keep warm. Fill cookies with fruit cocktail.
To make Wine Glaze: Use grape fruit juice in the form of sugar on or in butter-cream-like thin rounds.
