3 ice cubes
1 (8 ounce) can crushed pineapple, drained
1 (1.5 fluid ounce) jigger pineapple juice
1 (8 ounce) container frozen orange juice concentrate
1 can sliced fresh strawberries, thawed
1 orange slice
1 large cup chopped celery
1/8 teaspoon lemon zest
15 vanilla wafers
In a blender, combine ice, pineapple, juice, concentrate and sliced strawberries. Blend well. Stir in orange slice, celery and lemon zest. Store in refrigerator.
Melt butter in a medium bowl. Stir in egg and pineapple mixture. Blend well, refrigerate.
Place whipped cream in a large saucepan, and beat until smooth. Gradually beat into egg mixture while whipping cream is in the pan. Chill over ice until thickened. Serve chilled.
