1 cup mayonnaise
1 teaspoon prepared horseradish
1 teaspoon lemon juice
1 teaspoon lemon zest
6 tablespoons chopped fresh ginger
3 cloves garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
2 teaspoons tarragon
salt to taste
In a medium bowl, mix mayonnaise, horseradish, lemon juice, lemon zest and ginger. Mix in garlic and basil. Mix mixture until mixture is just moist enough to form into a 1/2 inch ball.
Preheat the oven to 350 degrees F (175 degrees C).
Place horseradish mixture in a medium bowl. Stir in tarragon, salt and raisins and sprinkle on top of crab.
Bake an 8 in. square pan on the stove over medium heat for 15 minutes. Turn the pan, and brush with egg yolk mixture.
Bake an additional 5 minutes in the microwave, brushing with the horseradish mixture halfway through the cooking time.
