1 (15 ounce) can whole kernel corn, drained
1 1/2 cups water
3 tablespoons vegetable oil
3 tablespoons white sugar
1/3 cup brown sugar for rolling
1/4 cup vinegar
1/2 teaspoon salt
4 cups cooked, cubed chicken breast halves
1 teaspoon dried minced onion
1 teaspoon lemon juice
2 teaspoons garlic powder
1 teaspoon dried oregano
1 teaspoon dried basil
In a large saucepan, bring water, corn, oil, white sugar, brown sugar, vinegar and salt to a boil. Stir, cover, remove from heat and let stand for about 15 minutes.
Remove the chicken from the pan and let cool. In a small bowl, mix the brown sugar, vinegar and salt. Mix well.
Heat the olive oil in a large skillet over medium heat. Add chicken, brown sugar mixture, onion, lemon juice, garlic powder, oregano and basil. Stir together and cook over medium heat for about 15 minutes.
