3 sheets low-fat cottage cheese (5 ounces)
2 tablespoons brown sugar
1 cup light cream
1 teaspoon vanilla extract
Melt cottage cheese and brown sugar in small, nonporous microwave-safe bowl. Stir in light cream and vanilla. Microwave on HIGH for 1 minute; stir. Pour mixture over cheese. Chill 1 hour or until firm. Remove cheese from refrigerator 5 minutes before ready to serve.
