1 (10 ounce) package frozen hash brown potatoes, thawed
1 tablespoon mayonnaise
1 tablespoon dried parsley
1 tablespoon onion powder
2 teaspoons salt
4 (4 ounce) cans beef broth
1 cup peanut oil
4 cups shredded carrot
4 cups fresh broccoli florets
Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x8 inch baking dish.
In a large bowl, mix hash brown potatoes, mayonnaise, parsley, onion powder, salt, beef broth, peanut oil, carrot and broccoli.
Bake 45 minutes in the preheated oven, or until potatoes are tender, about 8 minutes per side.
Remove from oven and cool on wire racks. Cool completely and serve hot or cold.
