1 pound Cheddar cheese, shredded
4 ounces shredded Swiss cheese
4 ounces Italian sausage, cut into 1 inch pieces
4 ounces pepper jack cheese
4 ounces blue cheese
3 tablespoons finely chopped onion
1 teaspoon prepared Dijon mustard
2 tablespoons mayonnaise
1 teaspoon Italian seasoning
1/4 teaspoon chopped fresh thyme
1 teaspoon lemon juice
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 2 quart casserole dish.
Reserve the block of cheese for a separate serving. Layer the Swiss cheese, Cheddar cheese and Italian sausage in basting pan; sprinkle with pepper jack cheese and blue cheese. Top with sausage. Sprinkle with lemon juice and mustard.
Bake 35 minutes in the preheated oven, or until pork is tender. Top with bread crumbs. Cover, and refrigerate overnight.
