2 eggs
1 cup packed brown sugar
1 cup pumpkin puree
1 1/4 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
1 cup butter, melted
2 cups milk
1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch springform pan or large glass baking dish.
Place eggs in a large bowl and beat together sugar, pumpkin, flour, baking powder, baking soda, salt, cinnamon and sugar mixture until smooth. Stir in melted butter, milk, and vanilla. Pour batter into prepared pan.
Bake in preheated oven for 40 to 45 minutes, or until a toothpick inserted into center of the pan comes out clean.
