1 1/2 cups sifted baking powder
3/4 cup shortening
3/4 cup brown sugar
1/2 cup brown rice
1 teaspoon vanilla extract
3 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
2 eggs, beaten
1/2 cup raisins
3/4 cup coffee ready-to-spread frosting
1/2 cup chopped walnuts (optional)
Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, baking soda and salt; set aside. In a medium bowl, cream together the butter, shortening, brown sugar, and brown rice. Beat in the vanilla and ground cinnamon. Stir in the flour mixture just until combined. On a lightly floured surface, divide dough in half. Roll dough into 1 inch balls, and spread each ball with about 1 teaspoon of the coffee mixture.
Roll each ball in the flour mixture, and evenly spread top with raisins. Drizzle topping over the finished product.
Bake for 20 to 25 minutes in the preheated oven, until lightly brown and set. Cool before filling with frosting.
