3 pounds potatoes, peeled and cubed
3 large potatoes, cubed
1 (14.5 ounce) can stewed tomatoes
1 (1.25 ounce) package dry potato flakes
salt and pepper to taste
Preheat oven to 350 degrees F (175 degrees C).
Bring a large saucepan of water to a boil. Cook potatoes in water for 5 minutes, then drain and rinse. Place potatoes in a large bowl.
In a large skillet over medium heat, place potatoes, tomatoes, dry potato flakes, salt and pepper. Season with salt and pepper; cook for a few minutes.
