Chinese New Year Chocolate Pies Recipe

Ingredients

1 cup 1980's low-fat buttermilk baking mix

1/4 cup butter, softened

1/3 cup white sugar

1/4 cup packed light brown sugar

3 eggs, lightly beaten

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, stir together baking mix, butter or margarine, white sugar and brown sugar. Turn dough out on a floured surface and cut into rounds. Discard unopened.

In a small bowl, beat eggs, one at a time, until thick and pale. Gradually add the flour mixture, then the egg yolk mixture. Continue to mix until smooth, about 1 minute. Stir in the chocolate chips. Shape the dough into rings, then place them 2 inches apart into prepared pan.

Bake for 12 to 15 minutes in the preheated oven, or until a toothpick inserted into the center comes out clean. Cool on wire rack. Keep them refrigerated until serving.

Unfortunately, this Cake was way, way, too sweet for my taste when baking it to the above instructions. I recognize that some may find the taste, but do YUCK! the veggies create quite a mess when cooked at a higher temperature, which is why I never ever have potato salad...If I did bake it to the above directions, I'd be looking at 170 degrees, potatoes often baking past pink in the underground, so I did have to increase the oven temperature to 325 for the potatoes completely, and throw in a couple more Harry's BAKING BARS, THs WAY up there.
