2 1/2 cups plain yogurt
1 cup cold water
1 cup frozen lemon curd
2 tablespoons honey
1/2 teaspoon salt
1/2 teaspoon vanilla extract
In a large bowl, combine chilled yogurt, water, lemon curd and honey. Stir well to combine. In a small bowl, mix salt, vanilla and 1/2 teaspoon of the creamy yogurt mixture. Add to mixture, and stir until well blended. Return to high heat and cook mixture over low heat, stirring constantly, until mixture thickens; set aside.
To serve, place slightly warmed yogurt in a small bowl; pour in 2 tablespoons of cream cheese mixture, then spoon the mixture over the yogurt. Let stand until completely smooth. Serve immediately.
