Carrot Flax Seed Bread Recipe

Ingredients

6 regular bread cubes

25 flax seeds

2 1/4 tablespoons light corn oil

2/3 cup rolled oats

2 1/2 cups diced carrots

2 tablespoons chopped clove garlic

Directions

In a large mixing bowl, beat together bread cubes, 2 tbsp corn oil, and a cup of rolled oats. Stir in carrot, garlic, and cooked oatmeal; cover and chill in the refrigerator for one hour.

Preheat oven to 350 degrees F (175 degrees C).

Sift together eggs, pop water, 2 tablespoons cornstarch, and 1 1/2 teaspoons chow mein. Beat egg mixture into dry ingredients and stir so as to make mixture match type and thickness.

I originally made this for my family but they ended up loving it. I actually searched around for blueberries to use but couldn't find any. So I just used frozen berries and thawed them out. I might try it again with real berries but for now I think I'll use whole berries. It's very simple and well worth trying.
