Italian Bread Pudding Recipe

Ingredients

1 1/2 teaspoons active dry yeast

1/2 teaspoon salt

1/2 cup warm water (110 degrees F/45 degrees C)

2/3 cup white sugar

1 tablespoon vegetable oil

1 egg

1 cup whole wheat flour

1 teaspoon salt

1 teaspoon salt

1 cup baked bread cubes

1 cup mini candy-coated chocolate mugs

2 tablespoons warm water

1 cup grated Parmesan cheese

1 (8 ounce) package cream cheese

1/2 cup white sugar

1 egg

1 tablespoon milk

Directions

Preheat oven to 500 F (230 C). Lightly grease a 10x15 inch baking dish.

In a small bowl, dissolve yeast and salt in warm water. Let stand, covered, 6 hours or overnight.

Pour yeast mixture into a 2 quart bowl, stir in tap water, whole wheat flour, salt and italian seasoning. Place baking dish into oven and preheate for 1 hour, or until bubbly and lightly toasted. When the dough has pulled together, remove from the oven and divide dough in two small, equal pieces. Form dough into balls, about 1 3/4 inches thick, and place onto lightly oiled baking sheet.

Bake for 15 to 20 minutes or until slightly brown. Cool completely.

Meanwhile, preheat oven broiler. Split the bread cubes in half. Place 2 inches apart onto the prepared baking sheet. Brush with egg white and sprinkle with parsley.

Increase oven temperature to 400 degrees F (200 degrees C) and bake for 8 to 20 minutes, or until knife inserted in center comes out clean. Cool on wire rack.

To make the sauce layer together melted cream cheese, 1/3 cup sugar, 1/3 cup milk and 1 tablespoon milk

Love this recipe! I have a lot of leftover bread in the freezer from pizza and bread pudding, and this is a great way to use it up. I added extra egg whites because I had leftovers, and it was perfect for breakfast, lunch, or even dinner. I used egg whites because I didn't have ww pastry flour, and it made for a very light breakfast. I will definitely make this again--probably tomorrow! :)
