1 (1 ounce) square unsweetened chocolate, chopped
1 (8 ounce) package cream cheese, softened
1/4 tablespoon white sugar
1 cup confectioners' sugar for rolling
In a food processor or blender, process the chocolate and cream cheese until creamy. Spread the mixture over the frozen pie crust. Let it set at room temperature for 1 hour, or until slightly sticky to the touch.
In a small bowl, sift together the confectioners' sugar and salt. Set aside.
To make the filling: In a large bowl, beat cream cheese, 1/4 cup of sugar and 1/2 teaspoon of salt until smooth. Gradually stir in the remaining 1/4 cup of sugar and salt, until the mixture is thick enough to coat the back of a metal spoon. Fold in the flour until no streaks remain. Pour the mixture into the pie shell. Chill before serving.
