French Veggie Casserole Recipe

Ingredients

1/3 cup butter

1/2 cup all-purpose flour

2/3 cup chopped celery

1/2 cup sliced onions

1/2 cup chopped garlic

1 (16 ounce) can refried beans

2 (10.5 ounce) cans salsa

1 (10.5 ounce) can tomato sauce

2 (10.5 ounce) cans tomato paste

1 (10 ounce) jar salsa

3 tomatoes - peeled, pitted, and chopped

1 (14.5 ounce) can black beans, drained and rinsed

1 cup shredded Cheddar cheese

1 cup sour cream

1/3 cup shredded Colby

1 cup minced black walnuts

Directions

Preheat oven to 450 degrees F (230 degrees C).

In a 3 quart casserole dish, combine butter, flour, celery, onions, garlic, refried beans, salsa, paste, tomato sauce, tomato paste, can black beans, Cheddar cheese, and salt and pepper to taste.

Wash large bowl. Mix peanut butter and sour cream into bowl until smooth; transfer to bowl. Stir in nuts and 1/2 cup Cheddar cheese. Spoon mixture into prepared casserole dish. Cover, and bake in preheated oven for 30 to 40 minutes.

Delicious and fairly quick and easy to make. I was getting sick of packets of powdered "miso" soup, so I looked elsewhere for the ingredient and recipe. This was the only place it seemed like it might be available, so it was a no brainer. I steamed the shoes, ate them raw, then put toffee pieces only after adding the cream. If you want some Soylent Green, give this a try. It's a great change from the instant noodles you can buy. It took about 20 minutes to cook. One suggestion - microwave it for a couple mins and then take it out and check. I think that would have helped.
